
Vegetarian Nachos!

In case you didn’t know, today is International Nacho Day. It was this day about 65 years ago that Ignacio “Nacho” Anaya created the snack at his restaurant in Piedras Negras, Mexico. According to NPR, the story is that he stuck some fried tortilla chips, cheese, and jalapeno under a broiler when some Americans showed up in his restaurant.
And thus the deliciousness was born.
So to celebrate, here’s my favorite vegetarian nacho recipe:
Basic Ingredients:
Mission tortilla chips
Extra sharp Vermont cheddar cheese
Vegetarian refried beans
Santa Barbara Salsa—Roasted Garlic Salsa
Tapatio hot sauce for a kick
Topping Ingredients:
Guacamole
Green onions
Chopped tomatoes
Shredded lettuce
Nonfat sour cream
Jalapeno slices
Sliced black olives
Instructions:
Spread tortilla chips on cookie sheet. Grate LOTS of cheese over top and add spoonfuls of refried beans throughout.
Bake in oven for 10 minutes at 300 degrees or until cheese is melted and beans are warm.
Remove from cookie sheet, transfer to plate. Add all your cold toppings.
Enjoy! Today is nacho day!
